Does not make side dishes better in summer than potatoes. This easy German potato salad is a short-cut version that my German grandmother used to make for us. It's delicious vinegar and potato salad based oil with fish, brats, pork or whatever you can think of!


If you are looking for German Potato Salad you will get tons of different versions. Some are made hot with meat sauce, some deepen chicken or beef broth for flavor. The difference between a recipe for German potato salad and American potato salad, is that they are vinegar based and don't use mayonnaise like traditional American recipes.

INGREDIENTS

  • 2 pound White Potatoes
  • 1/3 small garlic, finely diced (about 1/2 cup)
  • 3/4 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 3 tablespoons of apple or white wine vinegar
  • 1/4 cup of vegetable oil
  • 2 tablespoons of chopped parsley and / or leeks

INSTRUCTIONS

  1. Boil the peeled potatoes and whole for about 25 minutes, or until soft (they can easily be pierced with a fork or knife). Depending on the size of the potato, this can take a little more or less. Drain and lie in a single layer on a flat surface rather cold.
  2. When the potatoes are cold enough to handle but still warm enough, gently peel the skin with a thin knife (best work) or a potato peeler.
  3. Cut the potato discs very thin and place directly into a medium sized bowl. Season with salt and pepper, stirring gently to coat the potatoes. Pour vinegar and stir. Repeat with oil. Taste and adjust the desired spices.
