INGREDIENTS

  • 3 cups of leftover or pre-prepared mashed, cold potatoes
  • 1 1/2 cups of Borden shredded sharp cheddar cheese
  • 1/2 cup chopped green onion
  • 3/4 cup cooked bacon collapsed
  • 8 ounces of Colby Jack cheese cut in 1/2 inch
  • 1 egg, beaten
  • 1/2 cup of Panko style breadcrumbs
  • 1/2 cup grated parmesan cheese
  • salt and pepper to taste
  • The oil for frying

INSTRUCTIONS

  1. In a large bowl, combine potatoes, shredded cheddar, onions, and meat. Use an ice cream spoon for a 1 inch ball form, rolling with your hand to create a shape. Push 1 colby jack cube to the center of each ball, and then re-mix the mashed potatoes around to make it round again. Place on a plate and repeat with the remaining mashed potatoes. Located in the refrigerator for 30 minutes to set up.
  2. In a shallow bowl, place the eggs. In another shallow bowl, mix with bread flour, parmesan, and salt and pepper.
  3. Start by dipping each ball into the egg mixture, shaking from the excess and then rolling in the panko mixture. Pat to make sure the panko holds up well and that mashed potatoes are completely covered. Set it back on the plate and set it aside.
  4. Heat a large pan or Dutch oven with about 2-3 inches of oil for 375F.
  5. Carefully drop in 3-4 ball potatoes at a time into hot oil, allowing them to become fully submerged. Use a slotted spoon to lightly stir their fries to make sure they don't stay down or the sides of the pan. Fry every 2-3 minutes or until they are fully browned and crunchy. Use a slotted spoon to remove from the oil and place on a plate coated in a paper towel to dry. Repeat with the remaining ball mashed potatoes until they are all fried.
  6. Serve while hot and enjoy!
