You are like fruit, you like vodka, you like Popsicles, you like many things. So to help move faster towards all your likings, we find a way to combine the three likes into one.


Before the skeptic forehead can arch up, let's say yes, you can freeze vodka. After a few quick experiments and afternoon mixing and frozen nights ... Strawberries Peach Vodka Collins Popsicles are yours to lick!


Material

  • 6 oz strawberry porridge (about 10 strawberries)
  • 2 oz peach syrup (following recipe)
  • 12 oz tonic water
  • 2 oz plus 3 oz vodka (divided using)

Instruction

  1. Stir the strawberries puree with 2 oz. vodka. Place three teaspoons of strawberry mixture at the bottom of the Popsicle form; set aside. (As mentioned on last week's cocktail popsicle, I use cordial glasses, but any shape will work.)
  2. Stir the peach syrup with a stirring water tonic to combine. Add vodka and stir to combine.
  3. Pour the peach mixture and vodka over the strawberry mixture and stir to combine.
  4. freeze for about 2 hours or until the mixture begins to solidify enough to hold the upright popsicle stick. Add the Popsicle Stick and finish the freezing Popsicle overnight. To release popsicles run hot water outside the popsicle mold for 2-3 seconds.
