Ingredients
- CHICKEN ARTICHOKE
- 3 1 / 2-4 pounds of chicken legs and thighs
- 1 cup of artichoke liver (halved)
- 1 medium onion (large cut - to match the artichoke)
- 1 pound white button mushroom (halved or headquartered)
- 2 tablespoons of mustard chocolate
- 1 clove of garlic (chopped)
- 1/4 cup of olive oil
- 1/4 cup red wine vinegar
- 1/4 cup of red wine
- 1/4 teaspoon of dried basil
- 1/4 tsp dried thyme
- 1/4 teaspoon of dried tarragon
- 1 bay leaf
- salt and pepper (to taste)
Direction
- Preheat oven 350ºF.
- Place the chicken, side of the skin, in a baking sheet. Distribute the artichoke hearts, onions and mushrooms above. In a small mixing bowl, combine mustard, garlic, olive oil, vinegar, spice wine, dry, salt and pepper. Pour over chicken.
- Place in the oven and bake for 1 1/2 hours, polishing every 1/2 hour.
