I kind of on frozen food kicks since the baby will be here every day now (15 days and counting - bro)! I don't think I can match a single item in my freezer at this time, so I think this baby is better coming soon, so we can start eating everything I've already made / freezing.
Material
- 5lbs Golden Russet potatoes, peeled and diced
- 1 tablespoon salt
- 1 stick of salted butter
- 8 oz. sour cream
- 2 tablespoons of chives, chopped
- 1 tablespoon of minced garlic in water,
- 1/8 tsp black pepper
- salt to taste
Direction
- In a large stock pan, add water and boiled salt Peel cubed potatoes for 20-25 minutes until they fork tender. Drain the potatoes.
- While the potatoes are draining Melt the butter in the stock pan. After halfway melting the butter, add the potatoes back to the stock pan followed by sour cream, chives, minced garlic, and black pepper. Using a hand mixer, mix the potatoes until smooth and soft. Taste and decide whether you want to add extra salt and / or pepper. Sprinkle with additional chives and butter if desired and serve immediately.
