Quick and easy side dishes, your family will love this sweet and caramel balsamic roasted sweet potato, cauliflower and onions.
Many people say they tend to eat vegetable side dishes at night - usually steamed green beans or broccoli. While delicious, I always recommend eating a variety of foods throughout the year for maximum nutritional and health benefits.
Material
- 2 medium sweet potatoes peeled and diced
- 1 small cauliflower head cut flower petals
- 1 medium onion, red or yellow cubed
- 2 tablespoons of vinegar
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- fresh chopped herbs for garnish (ie garlic, parsley, etc.) - optional
Instructions
- Preheat oven to 400 degrees and pan with foil. Spray foil with cooking spray and set aside.
- Place chopped vegetables (sweet potatoes, cauliflower and onions) in a large resealable plastic bag and drizzle with vinegar, olive oil, salt and pepper. Seal tightly and shake well until the vegetables are evenly coated.
- Spread vegetables in layers even on a baking sheet and bake until lightly browned and carameled, 20-25 minutes.
- Sprinkle with fresh herbs before serving.
