Cheesy Bacon filled twice baked this potato which was filled to the brim with soft potatoes, cheddar and Parmesan cheese and lots and lots of bacon. They are great side dishes for holidays!
If my father claims to fame his classic meatloaf recipe, then my mother is this twice baked potato recipe. This is a little different because we don't add milk or sour cream to the mix of other recipes I've seen. That's pretty much going to make their mashed potatoes and that's not what we want. Just mash for a little potato and leave it to help any extra liquid potato flavor that really shines which is why we love them! This recipe is definitely classic, and something we enjoy with every Christmas and Easter dinner. I'm not sure why they are generally used for special occasions, but I think it's time we break that tradition. I plan to add delicious cheese and potatoes to this stuffed meat to the whole kill from the menu from here outside!
INGREDIENTS
- 6 baking potatoes
- 6 slices of bacon
- 6 tablespoons of butter, soften
- 6 tablespoons of freshly grated Parmesan cheese
- 1 cup of freshly grated sharp cheddar cheese
INSTRUCTIONS
- Bake the potatoes in 350˚ oven for 60 minutes. While the potatoes that bake the meat cook until crispy.
- Cool the potatoes for about 10 minutes and slice in half. Carefully scoop the inside of each half into the bowl. Leave a small amount of potatoes on the skin.
- To your bowl add butter and lightly mash. Add crushed meat, parmesan and ½ cup of Cheddar. Lightly Mix ingredients together. Potato spoon back to potato skin. (You may have some skin left.) Top with the remaining cheddar cheese. If you don't plan to bake immediately, cover and refrigerate overnight.
- Bake at 350˚ until the cheese melts, about 20 minutes.
- Decorate with leeks and serve immediately.
